Supper Plans

Tonights plan for supper is Round Top Steak with potatoes and carrots and Honey Muffins.Grandma's Honey Muffins

2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk
1/4 cup butter, melted
1/4 cup honey

In a bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the
egg, milk, butter and honey; stir into dry ingredients just until moistened. Fill
greased or paper-lined muffin cups three-fourths full. Bake at 400° for 15-18 minutes
or until a toothpick comes out clean. Remove from pan to a wire rack. Serve warm.

Yield: 1 dozen.

Greek Chicken & Potatoes

I found this recipe on The Erratic Homemaker (originally cam from Recipezaar) It sounds so yummy! I can't wait to try it. I think it would be excellent paired with a Greek salad. Yum!

Greek Chicken and Potatoes Recipe #93596

This is a deceptive recipe: quick and easy to make with a simple ingredient list but which really delivers the flavor. What more could you want from chicken and potatoes? I find one large lemon yields just about 1/4 cup juice. This recipe makes 4 servings, but my husband and I eat this easily between the two of us.
4 servings
45 min 10 min prep
2 boneless skinless chicken breasts, cut in 3/4 inch cubes
2 cups potatoes, cubed
3 cloves garlic, minced
1 chicken bouillon cube, dissolved in
3/8 cup water
1/4 cup olive oil
1/4 cup fresh lemon juice
1 teaspoon dried oregano
  salt and pepper
  1. Preheat oven to 400°F Place chicken, potatoes, and garlic in a 9 X 13 inch glass baking pan.
  2. Mix well to get everything evenly distributed in the pan.
  3. Season with salt and pepper.
  4. Pour the chicken bouillon over all.
  5. Whisk olive oil, lemon juice and crumbled oregano together.
  6. Pour evenly over chicken and potatoes.
  7. Bake approximately 30-35 minutes until chicken is cooked through and potatoes are tender and golden brown, basting occasionally with pan juices.

Tonights Supper and a tip for moms/moms-to-be

Hi!

Tonights supper is going to be Sauteed Chicken & Pasta with Roasted Garlic Tomato Sauce. Yummy! The plan is to sautee boneless skinless chicken breast with Italian seasoning. Then put the chicken on a bed of pasta topped with Roasted Garlic Tomato Sauce.

My mom found the pasta and sauce at Big Lots at an amazing price! The bag of pasta was 80cents and the can of roasted garlic tomato pasta sauce was 70cents (a huge can!!). For the two of us we can probably get at least 4 or 5 meals from the one bag of pasta and can of pasta sauce.

A great tip for moms/moms-to-be is to sign up to be on all the baby companies mailing lists that you can find. You'll get tons of samples and coupons! In the mail Friday was TWO cans of Enfamil Lipil w/ Iron formula as "samples" from Enfamil (they're the small cans of powder formula that you can buy at the store, 16oz I think). Unforunately we found out in the hospital that CJ is allergic to that formula (he has to have a Lactose-Free formula  when he does get formula). But I plan on taking them (along with the 3 cans I got in the gift packs from the hospital) to our local Health Dept for another mom that may need them.

Made the Sticky Chicken

OK So I made the Sticky Chicken yesterday using Leg Quarters. While they aren't sticky the seasoning was really good. I'm going to use the seasoning on chicken breasts next time. I fixed 4 leg quarters. We ate 2 and the other 2 went to feed the freezer.

I also threw the rest of the chicken in the crockpot with a bottle of BBQ sauce which will go in the freezer as well.

A great site that my mom just found is http://www.mysavingplace.com They have alot of money saving advice.
