Culinary Academy of Long Island

Testimonial from Kevin Falcone

"My name is Kevin Falcone. I entered the Professional Cooking program at The Culinary Academy of Long Island (CALI) in November 2007. It has been almost four months now since the first time I put on those black-and-white checkered pants and that long, baggy chef jacket. Since that first day, it has been nothing short of exhilarating. My chef instructor happens to be one of the best and most knowledgeable chefs I have ever met. Having Chef Victor J. McNulty teach me the proper techniques for professional cooking five hours a day, five days a week is a real benefit to me and my class. The chef instructors at CALI never shy away from a good question. The faculty always helps the students form and improve their cooking skills with good advice, proper demonstration and constructive criticism. The kitchen is a great place to learn and experiment.

Since attending CALI I have begun to learn many of the proper techniques for cooking and restaurant management. Whether I’m making stocks, sauces, soups and salads; grilling, roasting, broiling, deep frying; all the way through baking, I have taken a dive into all areas of all kinds of cuisines and I continuously improve my skills in the kitchen thanks to CALI. I would encourage anyone who has an interest in any area of the food industry to consider attending The Culinary Academy of Long Island. I'm certainly glad I did, and I couldn't be happier and more comfortable with my decision to attend CALI. I’ve also enrolled in the Professional Baking and Pastry program that starts in October."

Testimonial from Arielle L. Goldrath

"As a child growing up, I always loved watching the cooking channels and helping my parents in the kitchen. As I progressed in my adolescence, I became even more intrigued with the culinary arts. After some time spent in Hartford University, I realized I wasn’t on the track that I wanted my life to be on. So my mother and I researched the best options for me, then finally - and fortunately - our family friend told us about (Culinary Academy of Long Island) CALI. We immediately called and made and appointment.

The second I walked in the door, I felt the great energy of the school and the teachers, and all the staff members felt like immediate family. The staff is so helpful! If you need anything from advice to help anyone of them is always there for you.

Being here at the Culinary Academy of Long Island has taught me an immense number of skills that I will be needing in my future. So far, I love my experience here and my family agrees with me that this was the best decision I’ve ever made in my life.

During my time here at CALI, I also attended a charity event for the BCA. It was great experience, especially because at CALI they also focus a lot on catering. The charity event helped what it's like how it is to work in a completely different environment, with different people, and under a totally different time pressure. Everything at the event went according to plan, and I know I speak for everyone when I say that it was an amazing learning experience.

Learning from Chef Victor McNulty has been a pleasure, and I hope to further my knowledge in the culinary fields with the other great teachers this school has."

Message from the President

The economy may go up or down, but one of the few industries that continues to grow is the tourism and hospitality industry. With this growth comes a growing demand for skilled labor. The Culinary Academy of Long Island has been leading the way by helping students prepare for a wide variety of positions in restaurants, hotels, resorts, catering and cruise lines. It is my goal as president of CALI to continue to prepare each student and to place them in a rewarding profession of their choosing.

CALI has the training program you need to access these career opportunities—and do it in 9 months. Upon completion of your internship, our Career Services Office can help you find permanent work that meets your interests and goals. You’ll be taught in modern kitchens by chef-instructors who have studied at renowned schools and have years of experience in industry leadership positions.

Our Hotel Management Program begins with 6 months of intensive classroom and computer training. This will be followed by an internship at a regional hotel, conference center or catering establishment. The school then offers strong prospects for permanent employment in a range of positions. You’ll practice on industry-standard property management software and study with hotel management professionals who have many years of experience in industry leadership positions.

The New York greater metropolitan area is one of the world’s finest centers for hospitality, tourism and the culinary arts. If your dream is a career in this dynamic and trend-setting world, CALI can give you the tools, the knowledge and the motivation to make that dream come true…in as few as 9 months. I look forward to meeting you at orientation and seeing you off at your graduation ceremony!
