"My name is Kevin Falcone. I entered the Professional Cooking program at The Culinary Academy of Long Island (CALI) in November 2007. It has been almost four months now since the first time I put on those black-and-white checkered pants and that long, baggy chef jacket. Since that first day, it has been nothing short of exhilarating. My chef instructor happens to be one of the best and most knowledgeable chefs I have ever met. Having Chef Victor J. McNulty teach me the proper techniques for professional cooking five hours a day, five days a week is a real benefit to me and my class. The chef instructors at CALI never shy away from a good question. The faculty always helps the students form and improve their cooking skills with good advice, proper demonstration and constructive criticism. The kitchen is a great place to learn and experiment.

Since attending CALI I have begun to learn many of the proper techniques for cooking and restaurant management. Whether I’m making stocks, sauces, soups and salads; grilling, roasting, broiling, deep frying; all the way through baking, I have taken a dive into all areas of all kinds of cuisines and I continuously improve my skills in the kitchen thanks to CALI. I would encourage anyone who has an interest in any area of the food industry to consider attending The Culinary Academy of Long Island. I'm certainly glad I did, and I couldn't be happier and more comfortable with my decision to attend CALI. I’ve also enrolled in the Professional Baking and Pastry program that starts in October."
